There is just something about freshly made bread that screams “fall” to me. And this recipe is no exception. I fell in love with this bread when my mother-in-law first made it for me, and I’ve made it a handful of times since! It’s easy and delicious, and perfect for the fall. The recipe comes from her Aunt Rulah — and is just the best.
Ingredients:
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
3 c. flour
1 t. salt
1 t. soda
1/4 t. baking powder
1 c. chopped nuts
3 t. cinnamon
3 t. vanilla
1 c. chocolate chips
1 c. oil

Beat eggs until light; add oil, sugar, zucchini and vanilla. Mix lightly. Add flour, salt, soda, cinnamon, baking powder and nuts. Mix chocolate chips in last. Pour into two loaf pans. Bake 325 degrees for 1 hour.
I often bake one loaf of bread and 12 muffins, just for sometime different (and muffins are easier for Kyle to grab on his way to work). The muffins bake faster than the bread, so watch out for that! I think I generally check them about 30 minutes in.
